Three cups chicken (San bei ji)
This is a Taiwanese dish I learned from Rasa Malaysia. After attempting the recipe, CSY highly recommended it. I gave it a try 3 weeks ago and it tasted quite alright. Without the basil leaves, it probably taste like soy sauce chicken.
So here is the recipe..I improvised it a bit.
Ingredients:
1lb chicken drumsticks
6 slices peeled ginger
6 cloves garlic (peeled)
2 tbsp dark/black sesame oil (I used normal sesame oil)
1 1/2 tbsp soy sauce
1 1/2 tbsp Shaoxing wine
1 1/2 tbsp dark sweet soy sauce (I used dark soy sauce with 1 tsp fine sugar)
A big bunch of Thai basil leaves (Can substitute with spring onions)
Method:
1) Marinate chicken with 2 tbsp soy sauce, 2 tbsp sesame oil and 2 tbsp Shoaxing wine overnight.
2) Heat up some sesame oil until it is sizzling hot.
3) Add garlic and ginger and stir fry until aromatic.
4) Add in chicken and sear.
5) Add soy sauce, sweet soy sauce and Shaoxing wine and continue to stir fry the chicken.
6) Cover the chicken and lower the heat and simmer until all the liquid has disappeared (I didn't simmer fully). It will take probably take 45 mins to an hour to simmer until the liquid disappear.
7) Lastly, add basil leaves and stir well with the chicken, dish out and serve immediately.
