Cooking project @ 2 May 2009

Although feeling a little under the weather, I still managed to cook for my hubby. I've already planned the menu earlier.

Menu for the evening:
1) Aubergines with minced meat in black bean garlic sauce
2) Fried eggs with diced tomatoes

Aubergines with minced meat in black bean garlic sauce

The black bean garlic sauce was from Lee Kum Kee. I didn't prepare the sauce from scratch. What I did was:
1) Shallow-fry the aubergines. Once it turn golden brown, dish it out.
2) Then heat oil and stir fry the meat until 90% cooked. Put in 2 tablespoons of Lee Kum Kee black bean garlic sauce. Add in some sugar and pepper to season.
3) Add in the aubergines and stir fry for another 2 minutes. Dish out and serve hot.

My all time favourite egg dish. I don't need to details the recipes huh?
